Fried partridge with thick onion sauce
Ingredients for preparing fried partridge food
2 partridges, about half a kilo
Fresh scented leaves 2 leaves
A little fresh thyme leaves or thyme powder
Soft butter for partridge meat and sauce
A few small healthy onions
Salt and pepper as needed
A tablespoon of olive oil
A few tablespoons of apple cider vinegar
Brewed saffron
One measure of chicken broth
A spoonful of balsamic vinegar
Flour a tablespoon
How to cook fried partridge with thick onion sauce
Preheat the oven to 200 degrees Celsius, chop half the onions and fry in a little oil, then place around the dish where you put the partridge meat. Pour the apple cider vinegar and half of the chicken broth into the pan and cover the pan with foil and place in the oven for 25 to 30 minutes, then fry the remaining onions in olive oil until golden and fry a tablespoon of flour in it Add the rest of the chicken broth, balsamic vinegar, butter and brewed saffron, and when it boils and thickens, add salt and pepper and turn off the flame.

Hints :
Soak the quince with salt for an hour and then rinse.
